Octopus maya is endemic to the Yucatán Peninsula — thick, meaty, morphologically distinct from O. vulgaris. The only octopus species in the world carrying a Protected Geographical Indication, the same legal framework that protects Champagne and Parma Ham.

We close that gap through vertical integration. A certified processing facility, direct cooperative supply agreements, lot-level traceability from boat to container, and export relationships across the US, Europe, and Japan — operated by a team with deep roots in the Yucatecan fishing community and financial experience in international commodity markets.
The Protected Geographical Indication granted in 2024 — Mexico's first for any fishery product — gives Pulpo Maya the same legal standing as Champagne or Roquefort. Instinción is built to capture that premium.
